Shrimp Fajitas

Shrimp Fajitas

This is a twist on a classic recipe using shrimp instead of beef or chicken.
To make it easier you can substitute spices with 1 1/2 tablespoon fajita seasoning from Mccormick
I prefer the tortillas flour wrap heat on nonstick skilet without oil instead of microwave,somehow make the tortillas flour taste better with a slightly crisp texture.
I made this for my hubby special request, he likes
fajitas a lot...I said that  because he alone can eat 4 wraps !
Ingredients
2  tablespoon vegetable oil
1 green pepper, cut into 1/2 inch pieces
1/2 small size onion, thinly slice
1/2 pound  shrimp, peeled and deveined
2 tablespoon water  
8 flour tortillas, heat on pan without oil or microwave
Shredded lettuce, shredded cheddar cheese, salsa and sour cream, for serving
Spices
1 teaspoon black pepper
1 1/2 teaspoon kosher salt
1/2 teaspoon ground cumin
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1 tablespoon cornstarch

Directions
1. Mix well all the spices, put aside.
2. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Saute the onion, stirring freguently until  soft and fragrant. Remove from the skillet and set aside.
3. Pour the last remaining 1 tablespoon of vegetable oil and sautee the shrimp,at this point add half of the  spices stirring occationally. Cook until shrimp turn to pink, remove from the skillet and set a side.
4. Pour in green pepper, add the remaining of spices and 2  tablespoon water, keep stirring until the water  reduce half. Add saute onion and shrimp back to skillet and stirring until all the mix well and all water  reduced. Transfer to the large bowl  with the warmed tortillas, lettuce, cheese, salsa and sour cream .
Tips
When I'm in hurry after sauteing the onion, I add all the ingredient all together. But by pre sauteing them seperately you can achieve that nicely brown color and evenly cook.
